Vinaigrette Dressing

Makes 1 cup of dressing

1/4 cup lemon juice
1/4 cup red wine vinegar
1 clove garlic, peeled and mashed
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper to taste

 
COMBINE all ingredients in the order given and whisk until combined.

TASTE for seasoning; adjust if necessary. Set aside until ready to use.
