Strawberries With Balsamic Vinegar

Makes 8 servings

4 pints fresh strawberries, hulled and quartered
5 tablespoons aged or reduced balsamic vinegar
2 tablespoons sugar
1/4 teaspoon freshly ground black pepper
8 biscotti cookies
2 pints vanilla ice cream,
frozen yogurt or gelato
Freshly grated lemon zest for garnish

Strawberries With Balsamic Vinegar
COMBINE the strawberries, balsamic vinegar, sugar and pepper in a bowl. Set aside at room temperature for 30 minutes.

PLACE a spoonful of the strawberry mixture in a small decorative glass or bowl.

TOP with a scoop of ice cream, gelato or frozen yogurt.

ADD a biscotti cookie on the side and sprinkle with lemon zest.

Aged balsamic vinegars (such as Modena or Stravecchio) have a natural sweetness that is perfect for desserts, but can be expensive. For a less expensive alternative, try reducing 2 cups of young balsamic vinegar in a saucepan over low heat for 1 hour, or until reduced by half. As the liquid evaporates, the sugar content increases and becomes syrupy. Stored in a sealed jar, it will keep for up to a year.
