BOIL beets in water. Once boiling, simmer 30-45 minutes (set aside 1 1/2 cups of water).
PEEL and dice beets once cool.
MELT butter over low heat in saucepan.
WHISK in remaining ingredients (including saved beet water) with melted butter until mixture is smooth and thick.
ADD beets. Stir until well-coated.
