Corn Salad

Fresh Corn Salad

Yields 4-6 servings

3-4 ears fresh corn, kernels removed from cobs

1 pint cherry tomatoes, cut in half

3-4 fresh basil leaves, cut into thin strips

1 avocado, peeled and diced

Salt and pepper, to taste

Feta cheese, to taste

 
COMBINE first four ingredients in a small bowl, adding avocado last.

SEASON with salt and pepper to taste.

GARNISH individual servings with a sprinkling of feta cheese.
