Melt chocolate in top of a double boiler over hot water, or in a microwave. Remove from heat.
Blend in Coke, corn syrup, rum extract; then stir in vanilla wafer crumbs, sugar and nuts, mixing thoroughly. Cover and chill in refrigerator 2 hours, until stiff.
Form into bite-size balls (approximately 1 tablespoon each) and roll in flaked coconut, crushed peppermints or decorets. Place in a single layer on waxed paper and chill overnight. Cover loosely. If desired, insert a lollipop stick into center of each ball before serving. |
