Chocolate Nuggets

My mother made these every year, and now I do, too.

Yields: about 6 dozen

1 (6-ounce) bag chocolate chips
1/2 cup Coca-Cola
3 tablespoons light corn syrup
1 tablespoon rum extract
2 1/2 cups (7 1/4-ounce package) finely crushed vanilla wafers
2 cups sifted powdered sugar
1 cup finely chopped walnuts
Flaked coconut, crushed peppermints or decorets, for topping
Lollipop sticks (optional)

Melt chocolate in top of a double boiler over hot water, or in a microwave. Remove from heat.

Blend in Coke, corn syrup, rum extract; then stir in vanilla wafer crumbs, sugar and nuts, mixing thoroughly. Cover and chill in refrigerator 2 hours, until stiff.

Form into bite-size balls (approximately 1 tablespoon each) and roll in flaked coconut, crushed peppermints or decorets. Place in a single layer on waxed paper and chill overnight. Cover loosely. If desired, insert a lollipop stick into center of each ball before serving.
