Chocolate Mint Cookies

My mother’s friend gave her this recipe in 1952. The stains on my recipe card show how much my own family loves this treat. It’s so simple to make, and a great way to end a day of Christmas baking, since you just leave them in the oven overnight with no worry about oven temperature or baking times. When my kids were younger, one would always come running to me in the morning asking if I’d forgotten to take the cookies out of the oven!

Yields: 4 dozen

2 egg whites
¼ teaspoon cream of tartar
¾ cup sugar
Green food coloring
Dash of salt
1 (10-ounce) bag mint chocolate chips

Preheat oven to 375 degrees.

Beat egg whites with cream of tartar until peaked. Add sugar and beat until very stiff. Add food coloring, salt and chocolate chips; stir until mixed. Drop on greased cookie sheet.

Place cookies in oven and turn off. Leave cookies in oven overnight.
