Makes 10-15 bars• ½ cup honey
• ½ cup packed light brown sugar
• ½ stick unsalted butter
• ¼ cup apple juice
• 1 teaspoon salt
• 4 cups organic old-fashioned oatmeal
• 1 cup wheat germ
• ½ cup ground flax seed
• 1 cup finely diced dried apples
• 1 cup dried cranberries
• ½ cup finely chopped dates
• 1 ½ cups whole raw almonds
• 1 cup dried, unsweetened coconut flake
• 1 cup golden raisins
1. Place the first 5 ingredients into a small pot and bring to boil over medium-high heat. Cook for 1 minute, remove from heat and let cool while you mix the other ingredients together.
2. In a large mixer bowl, add the rest of the ingredients and turn
mixer on low speed. With the mixer running, add the syrup in a slow,
steady stream and mix until all the ingredients are wet and evenly
distributed.
3. Line the bottom of a 9” x 12” x 1” baking pan with parchment paper. Pour the mixture in the pan and spread to evenly cover pan. Using a rolling pin, flatten and compress mixture into a solid mass and place in the refrigerator for 3 hours or overnight. Use a butter knife to un-mold and cut mixture into bars and wrap each bar in plastic. Place wrapped bars in a plastic container with a lid and store in the freezer for 3 to 4 weeks. Take out 1 day before eating so the bar can soften a bit.
