South-of-the-Border Beer Batter

Makes 2½
cups
Ingredients
1½ cups flour
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
¼ to ½ teaspoon ground cayenne pepper
1-12 ounce Mexican beer
1. Place all the dry ingredients into a medium bowl and whisk together.
2. Add beer slowly as you whisk and continue until you have a smooth batter.
3. Let rest for 20 minutes in the refrigerator before using.
