Makes approximately 8 cups
Pineapple Agua Fresca 1 ripe pineapple, peeled, cored and chopped 6 cups water ½ cup sugar
Cantaloupe Agua Fresca 1 ripe cantaloupe or other orange-fleshed melon, such as muskmelon, peeled, seeds removed, and chopped 6 cups water ½ cup sugar
Strawberry Agua Fresca 4 cups strawberries, stems removed 6 cups water ½ cup sugar

| | | 1. Place half the fruit (pineapple, cantaloupe or strawberries) and 2 cups water into a blender; purée until liquefied. Pour mixture into a container. Place the rest of the fruit and 2 more cups of water in blender and repeat process. Add the last 2 cups of water and sugar to the container and stir until dissolved. 2. Let sit 1 hour and then strain into a new container; chill. When ready to serve, pour or ladle over ice into tall glasses. |
