Homemade Corn Tortilla Chips

This is a great way to use old tortilla. If you don't have a deep fryer, put about 1 cup of oil in a medium frying pan. If using a deep fryer, follow the manufacturer's instructions.

Corn tortillas cut into 6 to 8 wedges or strips
Oil for frying (peanut or grape-seed work best)
Sea salt to taste


 
Pan-frying:
Heat oil over medium-high for about a minute or two. Drop a small piece of tortilla into the oil, if it sinks, it's not hot enough. If it bubbles and comes to the top, it's perfect.

Deep fryer:
If using a deep fryer, use the same method as pan-frying. Make sure that the fryer is hot before starting each batch.

Using a slotted spoon or spatula, gently place a handful of tortilla wedges into the oil. Let pieces fry until golden brown and crispy, about one minute or so. Drain on paper towels and sprinkle with salt. Serve immediately or store in an airtight container
