Roasting Beets in Foil

Preheat oven to 375º. Trim the tops and tail of the beets. Scrub the beets well under warm water to remove any dirt. Place beets in center of a large piece of heavy-duty foil. Drizzle a small amount of olive oil over the beets, season to taste with kosher salt and freshly ground black pepper. Fold foil around the beets to create an airtight pouch and place in the oven. Roast large (baseball size) beets about 1 to 1 hour and 15 minutes, medium (jumbo egg size) about 35 to 45 minutes, and baby (quarter size) about 20 to 30 minutes. Beets are done when a knife slides into the flesh with no resistance. Leave wrapped and let cool. Use a paper towel to remove the skins.
