Makes 6 (½ cup) servings2 packets unflavored gelatin
½ cup sweetened fruit juice concentrate, thawed (grape, cranberry, apple or pomegranate)
½ cup water
2 cups sparkling water or club soda
1. In a glass bowl, add concentrate, sprinkle gelatin over top and set aside.
2. Bring the water to a boil and pour over the concentrate and gelatin. Mix until dissolved and clear.
3. Let cool to room temperature. Slowly add the sparkling water and gently mix. Try not to over-stir as it will remove too many bubbles. Pour into 6 serving glasses and place in the refrigerator for 2 hours or until set.
