Peeling Walnuts

1 pound fresh walnuts halves

Getting rid of some of the skin on walnuts will make them less bitter and will make lighter sauces.

1. Preheat oven to 350°.

Spread out walnuts in a single layer on a baking sheet. Place in the oven to bake for 10 to 12 minutes. You should start to smell the walnuts and see the skins begining to pull away from the meat.

Remove walnuts from the oven and let cool for 1 minute. Working in batches, place some nuts in a kitchen towel and gently rub them between your palms. This will pull of a good amount of the skins. Repeat with the rest of the walnuts.
